Leftover bananas

What do you do with overripe bananas? There’s no reason to throw them away just because they have turned brown and you don’t want to eat them anymore. You can still use them for a quick milk shake. Just blend the bananas with some fresh milk, that’s it.

Or you can make a cake from these bananas. This is what I decided to do last week when I found some leftover bananas in my fruit bowl. Eggs, milk, and flour are always there in my pantry. And so I made some banana chocolate muffins.

Banana chocolate muffins

Yields 12 muffins:
100 g chocolate
250 g flour
70 g sugar
1 tsp. baking powder
1/2 tsp. salt
2 bananas
100 ml milk
60 ml oil
1 egg

Preheat your oven to 180 °C. Grease your muffin pan or line it with paper cups.

Coarsely chop the chocolate. Mix flour, sugar, baking powder, salt, and chocolate in a bowl.

Peel the bananas and put them in a blender. Add milk, oil, and egg and blend everything. Pour the banana puree to the flour mixture, quickly stir with a rubber spatula just until combined. Don’t overdo stirring – you do not want any gluten to build in your batter or your muffins will become tough. (More on gluten in my panettone post.)

Fill the batter into the muffin cups and bake for 20-25 minutes. Take out of the oven and let rest for 5 min. Then take the muffins out of the pan and let cool on a wire rack.

    i usually use leftover/ overripe bananas to make banana bread and this is almost the same ingedients as this. but with chocolate, i think it’s gonna be yummier. plus the muffin itself looks nicer than typical banana bread. thanks for sharing. i will try this one weekend.
